I have visited thousands of coffee shops across the country and have always loved the character and characters of independent coffee shops. One such character was my father, if he were alive today I know we would enjoy a good cup of coffee and share stories and have a laugh.

Our Coffee Truck (Paul’s Baby)
While pretending to teach Physical Education, Paul obsessed about having a mobile coffee truck. Susy was humored at first and when she realized he was serious about leaving his secure job, she sent him to a therapist for a reality check. Susy’s plan backfired, the therapist said, “Gnoth saution”. Paul bought a coffee truck, watched how to make a latte on “Youtube”, and drove away happily ever after.

Paul and Susy have been working together over coffee for 4 years now. They have been married for over 15 after meeting while teaching in the local schools. After running an extremely successful coffee truck together they decided to take on Susy’s dream of opening a local coffee shop. Paul and Susy work hard at pursuing their dream, everyday you will find them working hard to serve customers at the Apollo’s cafe in Oak Park. Come in and have a cup of coffee today!
